What Is Gluten?
Gluten is a protein that is present in wheat, barley and rye.
What is Gluten Intolerance, or Gluten Sensitivity?
According to SFGate, “Gluten, when consumed by people who are gluten intolerant, causes a wide variety of adverse reactions-- some less severe, some more serious, including autoimmune disorders that cause your body to attack healthy intestinal tissue when gluten is present".
The medical term is Non-celiac gluten sensitivity, or gluten sensitivity. [Wikipedia]
Less severe forms of gluten intolerance are not autoimmune-related; however, they may present with the same symptoms as celiac disease. “
Anyone can be gluten intolerant, but if you have a family history of the condition or have an autoimmune disorder, you are at a higher risk: gluten intolerance can very well appear at any time within a person's life.
