For everything Mom does for us, she deserves something special. So how about breakfast or brunch? It's easy to gather some basic ingredients and make something quick and delicious.
Mother's Day Breakfast Recipes
If you want to wow Mom with a light and tasty morning meal, here are some great options:
Spinach Ricotta Brunch Bake–– this breakfast casserole recipe by Jo Cooks has cheddar cheese, red peppers, and a delicious spinach ricotta filling, but you can add whatever filling you want. Make it the morning before and serve. Easy peasy.
Easy Breakfast Pie–– another classic by Jo Cooks! Eggs, bacon, red bell peppers and cheddar cheese all wrapped up in crescent rolls. Perfect for Brunch.
Frittata Recipe–– Eggs, bacon, feta cheese, and mixed veggies make up this gluten-free crowd pleaser.
Quiche Lorraine–– Bacon, ham, shredded Swiss cheese with tart pastry crust, this is one of our favorite quiche recipes.
Kale and Feta Frittata–– with mushrooms, spinach and ham, call it a quiche if you want but this recipe by Plating Pixels is crust-free, otherwise known as a frittata.
