    This is fantastic for making European lean dough breads. Do not follow the "greasing instructions" for making lean dough bread. Preheat the pan and lid in a 500 degree oven, dry. I proof the bread on a piece of parchment, and squeeze it in a linen couche. When your bread is proofed, slash, lift the thole thing parchment paper and all, into the VERY hot pan, replace lid. Put it back into the oven. I bake 15 minutes at 500, then remove the lid and bake 15 more minutes (at 500) for a perfect, crusty, beautiful big loaf of bread. Fantastic. It is quite a big loaf pan, I use at least 4 cups of flour for a recipe.

    i have not made any other kind of bread, but I would not grease this. And I probably wouldn't use it to cook meat or anything goopy. It absorbs liquid.
