"South of the Border" Deep Dish Pizza

Makes six to eight servings 

Basic Pizza Crust
¾ - 1 lb. lean ground beef or pork sausage
1 small onion, chopped
1 clove garlic, minced
¼ cup ketchup
1-2 tbsp. chili powder
Dash of cayenne pepper
Jalapeño peppers
¾-1 lb. shredded Monterrey Jack and/or Colby cheese
½ cup Mexican salsa (tomato and chili sauce) 

Prepare pizza crust. Transfer to deep dish pizza pan, shaping so that the edge is flush with the rim of the pan.

Brown ground beef with onion and garlic in large skillet; drain. Add ketchup, chili powder, and cayenne pepper; simmer about 5 minutes.

Sprinkle about two-thirds of the cheese into the unbaked crust. Add Jalapeño peppers to suit your taste. Spoon in the ground beef mixture and top with the salsa. Sprinkle with remaining cheese. Bake in a 450º oven for 25 to 30 minutes until crust is golden and filling is bubbly. Let set a few minutes before serving.

For Mexican Bean and Cheese Pizza, omit ground beef and ground beef seasonings. Use 1 can (16 oz.) refried beans instead. Adjust seasoning accordingly.
