Margherita Pizza

Queen Margherita loved this pizza that her chef, Esposito, presented her with in 1889. Fresh and fragrant basil is the secret to the best Pizza Margherita, although dried basil can be used.

1 recipe Basic Pizza Dough
½ cup grated parmesan or Romano cheese
4 tablespoons olive oil
3 to 4 cups tomato sauce for pizza
2 to 4 cups sliced fresh (or grated) mozzarella cheese
½ cup chopped fresh basil or 2 teaspoons dried basil

After the dough has risen, (about 1 ½ hours), preheat the oven to 500 degrees F. Roll out the dough onto a lightly-floured surface to form a 12” circle. Roll up the edges of the dough to form a rim. Brush the dough with olive oil, spread the mozzarella cheese over the dough, and then spoon the sauce over the cheese. Sprinkle the basil over the pizza. Add the grated Parmesan or Romano cheese on top, and drizzle olive oil over the whole pizza. Bake for 10 to 15 minutes until the crust is golden brown.
