Holiday Cranberry & Zesty Orange Bread

This recipe works best with the Superstone® Covered Baker.


2 eggs
1½ tsp of salt
2 tsp of baking soda
⅔ cup of vegetable oil
4 cups of cranberries, cut in half
2 tbsp of orange rind, finely grated
1 ½ cups of chopped pecans or walnuts (optional)
2 cups of sugar and ⅓ cup (for the cranberries later)
4 cups of flour
1 cup water
1 cup of orange juice


Preheat the oven to 350ºF, spray the Covered Baker with non-stick spray.
Slicing cranberries in halves, top them with ⅓ cup of sugar, setting them aside for later.

Mix the flour, baking soda, and salt together in a medium-sized bowl.

In a separate bowl, combine the 2 cups of sugar, the vegetable oil and the orange rinds. Add the 2 eggs and mix all together.
Slowly add the flour mixture, the 1 cup of orange juice, and the 1 cup of water to the pre-made sugar mixture. Add the chopped nuts and the cranberries, mix well.

Pour the batter into the greased Covered Baker and bake at 350 degrees for 35-45 minutes.
Stick a butter knife into the bread to make sure it’s fully cooked. If the knife comes out covered in batter, let the bread cook for a few more minutes.

Let the bread cool for 10-15 minutes, then remove from the Covered Baker to cool completely on a cooling rack before serving.
