Holiday Cranberry Nut Bread

This recipe works best with the Superstone® La Cloche.

1 egg
1 tsp salt
1 cup of sugar
½ tsp baking soda
2 cups of all-purpose flour
1½ tsp double-acting baking powder
1 cup of cranberries, chopped into quarters
⅓ cup of walnuts, chopped into quarters
¾ cup of orange juice
1 teaspoon freshly grated orange zest
 ½ cup (1 stick) of cold unsalted butter, sliced up

Preheat the oven to 350ºF, preheat the La Cloche® as well.

Blend the flour, salt, sugar, butter, baking soda and baking powder together In a food processor, and the butter until the mixture has a powdery consistency. Transfer the mixture into a large bowl.

Whisk together the egg, zest, and the juice in a small bowl, adding the mixture to the flour mixture, stirring together the batter until it is well combined.

Stirring in the cranberries and the walnuts, transfer the batter into your La Cloche®. Bake the bread in the middle of a preheated 350°F. oven for 90 minutes, or until a tester comes out clean.

Let the bread cool for 10-15 minutes, then remove from La Cloche® to cool completely on a cooling rack before serving.
