Classic Easy-to-Make Banana Bread
This recipe works well with the Superstone® Covered Baker.
Ingredients:
1 ¼ tsp of salt
2 tsp of baking soda
4 ½ cups of all-purpose flour
5 large eggs
2 ½ cups of sugar
¾ cup of softened butter
2 ½ tsp of vanilla extract
⅔ cups plain low-fat yogurt
3 cups mashed ripe banana (about 6 bananas)
Cooking spray
Instructions:
Preheat your oven to 350° F.
Stirring with a whisk, combine the flour, baking soda, and salt together in a medium-sized bowl.
Mix the sugar and butter in a large bowl with a mixer at medium speed or hand whisk for about a minute. Add the eggs one at a time, mixing well after each addition.
Add the banana, yogurt, and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist. Spoon the batter into the Superstone® Covered Baker coated with cooking spray.
Bake at 350° for 1 hour or until you can insert a wooden toothpick inserted in the bread and it comes out clean.
Let the bread cool for 20 minutes or so, then remove from the Covered Baker to cool completely on a cooling rack before serving.
