Bread Dome Roasted Turkey Breast
Serve with a raisin-nut stuffing or with curry-seasoned rice. Serves twelve to fourteen.
6-7 lb. turkey breast
Seasoned salt and pepper
2 cloves garlic
6-8 sage leaves or other fresh herbs
Prepare turkey breast for roasting and place in Bread Dome. Season with salt and pepper. Loosen skin enough on either side of breast so that garlic cloves can be placed between skin and breast meat. Insert garlic and add sage. Cover and bake at 400° for 1 ½ hours. Uncover and glaze, if desired. Continue cooking for 15 to 30 minutes until bird is browned and done. Set aside to rest a few minutes before slicing.
For Golden Oriental Glaze, combine 1/3 cup soy sauce, ¼ cup corn syrup, 2 tbsp. cooking oil, and 1 clove garlic, minced, or ¼ tsp. garlic powder. Brush turkey with sauce.
For Barbecue Glaze, combine ½ cup catsup, ¼ cup honey, 2 tbsp. each cooking oil and vinegar, and ½ tsp. each ground cloves and seasoned salt. Brush turkey with sauce.
