Now that Thanksgiving is past us, we can start to calm down and enjoy some peace and quiet for a bit. Even with a much smaller holiday than usual, there was still a lot of hustle and bustle that came with the day. So. Much. Cooking.

As much as I love cooking and feeding my loved ones, sometimes a nice dinner for two is just what I really need. Between kids and work, my husband and I get very little time together, especially during the holidays, so sometimes you just have to make it happen.

Lately, for us that means we send the kids to grandma’s house and we have a dinner date at home. For our most recent date night we enjoyed roasted chicken with some of the most delicious sides I have ever made (if I do say so myself). Seriously...they were that good.

  • Leave the skin on the potatoes. It holds in the moisture while also crisping the outside. That means that the crispy outside will change to the fluffy potato in one bite. Delicious!
  • Do not stack the potatoes
  • Allow space between each potato
  • Coat potatoes with olive oil and seasoning
  • Keep lid on the baker
  • Turn oven to 350 degrees and bake for 1 hour

When it comes time to serve the potatoes, you can leave them whole, or you can slice them in halves with another drizzle of olive oil and seasonings. Another popular way to serve up roasted baby potatoes is to smash them immediately after roasting them, again topping them with a drizzle of seasoned olive oil.
