Bacon, Onion, and Cheese Pizza

Makes six to eight servings
Basic Pizza Crust
½ lb. sliced bacon, cut in quarters
1 large onion, coarsely chopped
1/2 - 3/4 pound shredded mozzarella cheese
1 ½ cups Fresh Tomato Sauce
½ cup pitted ripe olives, sliced or halved
¼ cup freshly grated parmesan cheese 

Prepare pizza crust. Transfer to deep dish pizza pan, shaping so that the edge is flush with the rim of the pan. Fry bacon until crisp; let drain on paper towels. Reserve 2 tbsp. bacon drippings and sauté onion until soft.

To assemble pizza, sprinkle about half the mozzarella cheese into the unbaked crust. Spoon onions over the cheese and top with bacon. Spread tomato sauce over bacon. Sprinkle with olives and remaining mozzarella and parmesan cheese. Bake in a 450º oven for 25 to 30 minutes until crust is golden and filling is bubbly, as directed. Let set a few minutes before serving.
