1lb. small red new potatoes
2 tablespoons olive oil
Roasted cloves of 1 garlic bulb
1 tablespoon kosher salt
Preheat oven to 350ºF. Pierce potatoes with a fork. Coat potatoes with olive oil.
Mash roasted garlic cloves and spread mixture over potatoes. Sprinkle with kosher salt and bake, covered for 1 hour or until potatoes are tender when poked with a fork.
